Christmas mini muffins

Whip up these delicious mini-muffins for the perfect Christmas morning treat.

Ingredients

  • 1 1/3 cups (200g) self-raising flour
  • 1/3 cup (75g) demerara sugar
  • 1 egg, lightly beaten
  • ½ cup (125ml) rice bran oil
  • 1/3 cup (80ml) milk
  • 1½ cups fruit mince

Method

  1. Preheat oven to 200°C or 180°C fan. Place mini paper patty cases into
  2. four 12-hole mini muffin pans.
  3. Sift flour into a bowl and mix in sugar. In a small bowl, combine egg, oil, milk and fruit mince. Fold into dry ingredients.
  4. Spoon just under a tablespoon of mixture into each patty case and bake
  5. for 15 minutes, until well risen and golden. Serve warm or at room temperature. Makes about 42.
