Tomato and basil salad


Ingredients

  • 4 large ripe tomatoes , thinly sliced
  • 1 eschalot, peeled and finely chopped
  • 8 basil leaves, roughly torn
  • 2 tablespoons extra virgin olive oil
  • Balsamic or wine vinegar

Method

  1. Arrange tomato slices on a serving platter. Sprinkle with eschalot and basil.
  2. Drizzle with oil and vinegar. Season to taste before serving.
