Summer salad


It is a nice tasty salad on its own as a snack for all ages or as a side dish with meals.

Ingredients

  • 1 cucumber, chopped
  • 2 tomatoes , finely chopped
  • 1 stem coriander, chopped
  • 2 tablespoons light yogurt
  • lemon juice, to taste
  • Cracked pepper, to taste

Method

  1. Peel and wash cucumber; chop it into pieces. If the seeds are firm and big, de-seed the cucumber as they can be chewy to eat and get between teeth.
  2. Wash and finely chop tomatoes.
  3. Transfer the vegetables to salad bowl. Add chopped coriander. Blend salad gently with the yogurt. Cover the bowl with clingfilm and place in fridge.
  4. Serve cold with a dash of lemon juice and sprinkle of cracked pepper for aroma and taste.
