Pork vindaloo


Ingredients

  • 1kg pork steak, trimmed, cubed
  • 2 tablespoons vegetable oil
  • 2 onions, finely sliced
  • 3 garlic cloves, finely chopped
  • 1 cup (250ml) beef stock
  • Steamed rice, to serve
  • Vindaloo paste
  • 3 garlic cloves, crushed
  • 1 tablespoon grated ginger
  • 1 tablespoon curry powder
  • 1 tablespoon tomato paste
  • 1 teaspoon ground chilli
  • ½ teaspoon ground cumin
  • ½ teaspoon ground turmeric

Method

  1. To make vindaloo paste, combine all ingredients in a shallow bowl. Add pork and toss to coat. Cover and refrigerate for 2 hours.
  2. Heat 1 tablespoon of oil in a large saucepan on high. Cook pork for 5 minutes, in batches, until browned. Remove and set aside.
  3. Reduce heat to medium and add remaining oil to pan. Cook onion and garlic for 5 minutes, until soft. Add pork and stock. Simmer on low heat for 40 minutes, until pork is tender and sauce thickens. Serve with rice.
