Spicy roasted zucchini


Ingredients

  • 4 zucchini, thickly sliced
  • 1 tablespoon olive oil
  • 2 garlic cloves, crushed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Natural yogurt, to serve
  • Coriander leaves

Method

  1. Preheat oven to 200°C or 180°C fan.
  2. In a roasting pan, combine zucchini, olive oil, garlic, cumin and coriander. Season to taste. Roast for 10-15 minutes, tossing halfway through cooking, until tender and starting to colour.
  3. Remove and stir through coriander leaves. Serve with natural yogurt.
