Greek rice pudding

Ingredients

  • 5 cups (1.25l) milk
  • ½ cup (100g) arborio rice
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon cornflour (optional)
  • 1 teaspoon ground cinnamon

Method

  1. Heat milk and rice in a heavy-based saucepan on medium, stirring frequently, until simmering. Reduce heat to low and simmer for 30 minutes, stirring occasionally, until rice is tender.
  2. Stir in sugar and vanilla extract and cook for another minute. If the pudding needs thickening, mix cornflour in a small bowl with 1 tablespoon water and stir into rice. Spoon rice into small serving bowls and sprinkle with cinnamon. Serve warm or at room temperature.

      It is labelled Greek because it is a traditional Greek sweet called Rizorgalo meaning"rice pudding". Spoken by a Australian born Greek that loves this recipe!
