Meatballs in saffron


Ingredients

  • 500g beef mince
  • 1/3 cup (65g) basmati rice, well washed, rinsed, drained
  • 2 garlic cloves, crushed
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cumin
  • 1 onion, very finely chopped
  • 1 tablespoon olive oil
  • ½ teaspoon ground chilli
  • ½ teaspoon saffron threads
  • 2 tablespoons chopped parsley
  • 1 lemon, juiced
  • Steamed couscous, lemon wedges, to serve

Method

  1. Combine mince, rice, garlic, cinnamon and cumin. Season. With wet hands, shape mixture into small meatballs. Chill for 10 minutes.
  2. Place onion, oil, chilli, saffron and 5 cups water in a saucepan. Season, bring to boil and add meatballs. Cover, simmer on low for 30 minutes. Stir in parsley and lemon juice. Serve with couscous and lemon wedges.
