Palm Sugar Vinaigrette

Perfect for Lobster, Soy Chicken and Mango Salad - See my recipe

Ingredients

  • 150 g Palm Sugar
  • 1.2 L Extra Virgin Olive Oil
  • 300 ml red wine vinegar
  • 350 ml sherry vinegar
  • 6 Garlic Cloves chopped and pounded
  • 1 bunch chervil finely chopped
  • 1 bunch chive finely chopped
  • sea salt to taste
  • Freshly Ground Pepper to taste

Method

  1. Caramelise the palm sugar, remove from heat and carefully whisk in the red wine vinegar and sherry vinegar.
  2. Slowly incorporate the olive oil then add the garlic, herbs, salt and pepper.
