Spaghetti with ocean trout and tomatoes


Ingredients

  • 2 tablespoons olive oil
  • 3 garlic cloves, crushed
  • 250g cherry tomatoes , halved
  • 300g ocean trout fillet, cut into cubes
  • 1 tablespoon baby capers
  • 500g spaghetti
  • 1 cup basil leaves

Method

  1. Heat oil in a large frying pan on medium. Sauté garlic for 1 minute, until starting to change colour. Add tomatoes and cook for 1 minute, stirring. Add trout and season to taste. Reduce heat and simmer for 5 minutes. Add capers.
  2. Cook spaghetti in a large saucepan of boiling, salted water according to packet directions. Drain. Return to pan and stir in basil and trout mixture. Serve immediately.
