Caramelised apple tarte tatin

Method

  1. It is best to prepare the port reduction before the tart, so place all ingredients in a pot and put on stove. Bring to a simmer and continue reducing until liquid becomes thicker (the consistency of syrup). To test the reduction, dip a spoon into the liquid — it's ready when it coats the back of the spoon.
  2. Peel the apples and cut in half lengthways. In two large pans, place sugar and butter and heat gently to dissolve. Place apple (with the cut side down) onto the butter and sugar (3 halves per pan), then place disc of puff pastry on top of apple and gently push down so the pastry covers the apple. Store in fridge until you need them.
  3. To serve, preheat oven to 200°C. When guests are ready, place fry pans into oven for 20 minutes, give or take a few minutes depending on your oven. Check regularly and when ready, take fry pans out of oven and quickly turn over tarts using a metal egg flip so you can see caramel on top. Place each tart on a plate, drizzle with the port reduction and place a scoop of ice cream on top. Serve immediately.
