Eggless whacky cake


This is an eggless cake which I make for my granddaughter who is allergic to eggs.

Ingredients

  • 1½ cups self raising flour
  • 3 tablespoons cooking cocoa
  • 1 cup sugar
  • 1 cup tepid water
  • 5 tablespoons melted butter
  • ½ teaspoon salt
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla essence

Method

  1. Preheat oven to 180°C.
  2. Mix all dry ingredients together. Add vinegar, vanilla and water to dry ingredients and mix well. Add the melted butter and stir until combined.
  3. Place into a ungreased baking dish (12" x 8"). Bake in moderate oven for 30 minutes. Run a knife around the dish when cooked and then allow to cool.
  4. Tip onto plate and ice with chocolate icing.
