Chicken surprise

Succulent chicken wrapped in bacon with a delicious stuffing.

Ingredients

  • 4 chicken thigh maryland fillets
  • 4 rashers bacon
  • 1 onion
  • ½ cup grated cheese
  • 1 cup breadcrumbs
  • 2 tablespoons tomato sauce
  • Thyme to taste

Method

  1. Make a stuffing of finely chopped onion, grated cheese, fresh breadcrumbs, tomato sauce and thyme to taste.
  2. Fill chicken thigh Maryland fillets with stuffing. Roll over and wrap in a rasher of bacon.
  3. Cook in moderate oven for 35-40 min.
