Smoked salmon fettucine


Perfect for weight watchers or people on low fat diets. Quick, easy and very yummy.

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 1 red onion
  • 250 - 300g smoked salmon
  • 3 sprigs of dill
  • 1 tub of low fat riccotta cheese
  • salt and pepper
  • 1 tablespoon lemon juice
  • Cooked fettuccine for 2 people

Method

  1. Sauteé oil, onion and garlic in a pan until onion is transparent.
  2. Add lemon juice and dill (reserve some dill for garnish).
  3. Cut up the smoked salmon roughly and add to pan, stirring for about 1 minute.
  4. Add riccotta and season to taste. If mixture is too thick, add some skim milk.
  5. Lastly, add cooked fettucine and stir well.
  6. Serve on plate and garnish with some dill.
