Thai beef salad


Ingredients

  • 1 teaspoon vegetable oil
  • 1 sirloin steak (250g), trimmed
  • 100g rice noodles
  • ½ telegraph cucumber, sliced
  • 10 cherry tomatoes , halved
  • ½ red onion, sliced
  • 2 tablespoons thai basil leaves
  • 1 tablespoon peanuts, crushed
  • Dressing:
  • 1 tablespoon lime juice
  • 2 teaspoons fish sauce
  • 1 tablespoon sweet chilli sauce

Method

  1. Heat oil in a non-stick frying pan over medium to high heat. Add steak and cook for 2 minutes each side. Rest meat for 5 minutes before slicing.
  2. Place rice noodles in a bowl and cover with boiling water. Leave to soak for 5 minutes before rinsing under cold water, then drain.
  3. To make the dressing, combine lime juice, fish sauce and sweet chilli sauce, and mix well.
  4. Place cucumber, tomatoes, onion, basil leaves, beef, noodles and dressing in a bowl and toss.
  5. To serve, divide the salad between 2 bowls and sprinkle with peanuts.
