Mini pavlovas


Ingredients

  • 2 egg whites
  • ½ cup caster sugar
  • ½ teaspoon vanilla essence
  • ½ cup double cream
  • 1 mango, sliced
  • 2 passionfruit

Method

  1. Preheat the oven to 150°C and line a baking tray with baking paper.
  2. Whisk the egg whites in an electric mixer until they form soft peaks. While whisking, start to add the sugar a little at a time until the meringue is thick and glossy. Then stir in the vanilla essence.
  3. Spoon the meringue on to the tray in 2 mounds and smooth the surface. Reduce the oven to 125°C and bake for 30 minutes. Then turn the oven off and leave to cool completely.
  4. Serve the meringues topped with double cream, mango slices and passionfruit.
