Vegetable frittata


Ingredients

  • 1 teaspoon olive oil
  • 1 small red onion, roughly chopped
  • 1 small red capsicum, sliced
  • 3 marinated artichoke hearts, sliced
  • 2 tablespoons parsley
  • 8 eggs
  • 600ml single cream
  • ½ cup parmesan, finely grated

Method

  1. Preheat the oven to 160°C and line a 20 x 30 centimetre slice tin with baking paper.
  2. Heat the oil in a non-stick frying pan over medium heat and add the onion and capsicum. Cook for 5 minutes or until soft, then stir in the artichoke hearts and parsley.
  3. Place the eggs and cream into a separate bowl and whisk to combine. Arrange the vegetables over the base of the slice tin, pour over the egg mixture and sprinkle with the parmesan.
  4. Bake for 35 minutes or until the frittata is set and golden brown. Cool completely before slicing.
