Chilli chicken wraps


Ingredients

  • 1 teaspoon olive oil
  • 1 chicken breast (or leftover barbecued chicken)
  • 2 lavash sheets
  • 1 carrot, grated
  • 1 shallot, sliced
  • Snow-pea sprouts
  • Chilli mayonnaise:
  • 2 tablespoons whole-egg mayonnaise
  • 1 tablespoon sweet chilli sauce

Method

  1. Heat the oil in a non-stick frying pan over medium heat. Add the chicken breast and cook for 5 minutes on each side.
  2. When the breast is cool enough to handle, shred the meat.
  3. To make the chilli mayonnaise, simply stir the mayonnaise and sweet chilli sauce together.
  4. To assemble, spread the lavash with the mayonnaise and top with the chicken, carrot, shallots and snow-pea sprouts. Roll up tightly and tie with string to secure.
