Sweet chilli prawns


Ingredients

  • 12 medium green prawns, peeled and de-veined (tails on)
  • 1 clove garlic, chopped
  • 1 red chilli, seeded and chopped
  • 4 kaffir lime leaves, shredded
  • 2 tsp honey
  • Asian salad:
  • 1 cup chinese cabbage, shredded
  • ½ cup snowpea sprouts
  • ½ telegraph cucumber, shaved
  • 2 shallots, sliced on diagonal
  • ¼ cup mint leaves
  • 2 tbs lime juice
  • 2 tbs sweet chilli sauce

Method

  1. Place the garlic, chilli, lime leaves and honey in a bowl with the prawns and stir to combine. Cover with plastic wrap and refrigerate for 30 minutes. Heat a barbecue or char-grill pan over medium heat and cook the prawns for one to two minutes each side or until cooked through. Place all the salad ingredients in a large bowl and toss. To serve, divide the salad between two bowls, top with the prawns and a wedge of lime. Serves 2
