Snowy Mountain casserole


A warming, hearty dish for those winter nights.

Ingredients

Method

  1. Melt butter. Sauté onions, carrots, celery and garlic until onion is cooked.
  2. Spoon into casserole dish.
  3. Coat meat in seasoned flour. Heat oil and extra butter and brown meat well. Add to vegetable mix.
  4. Add tomatoes and herbs to pan with oil. Pour over meat and vegetables.
  5. Cover and bake in moderate oven for 1 ½ hours or until meat is cooked, stirring occasionally.
  6. Season with salt and pepper, to taste.
