Grilled stuffed mushrooms


Ingredients

  • 4 large field mushrooms
  • 1½ cups boiled rice
  • 100g pine nuts
  • ½ red capsicum, finely chopped
  • ½ green capsicum, finely chopped
  • 1 teaspoon fresh thyme
  • Pinch cracked black pepper
  • Pinch salt
  • Pinch all-purpose seasoning
  • ¼ cup carrot, grated
  • 2 sticks celery, finely chopped
  • ½ cup cheese
  • ½ cup sour cream

Method

  1. Wipe mushrooms with damp cloth.
  2. Combine rice, pine nuts, capsicum, thyme, seasoning, carrot and celery in a bowl and mix well.
  3. Evenly spoon mixture on top of mushrooms.
  4. Top with grated cheese and put under grill until golden brown.
  5. Serve with a lashing of sour cream.
