Lyn's multi-purpose sweet and sour sauce


This concoction can be used as anything on anything. Everyone in my family liked it, even my Nan who isn't accustomed to exotic flavours. She liked the subtleness of the lemon juice and the strength of the thyme.

Ingredients

  • Juice of a whole lemon
  • Juice of a whole orange
  • A handful of thyme (crushed liberally)
  • 2 leaves of basil
  • 1 small dried chilli
  • 1 teaspoon of coriander leaves
  • ½ teaspoon finely diced spanish onion
  • 2 ½ tablespoons of rice bran oil (if using as a marinade)

Method

  1. Crush basil, dried chilli and coriander leaves together with the back of a cleaver or sharp knife.
  2. Squeeze lemon and orange juice into a small bowl and whisk lightly with a fork.
  3. Add 'crushed' thyme and then the basil, chilli and coriander. Stir vigorously and leave for 45 minutes or until ready to serve.
  4. Add rice bran oil, if using as a marinade. If unavailable, olive oil should do the job.
