Sweet chilli prawns


Delicious sweet chilli prawns on a bed of rice.

Ingredients

  • 750g prawns (the bigger, the better), peeled and deveined
  • 1 onion, diced
  • 1 capsicum, diced
  • 2 cups of sweet chilli sauce
  • 100ml cream
  • 100ml coconut cream
  • 2 cups of rice
  • 1 tablespoon olive oil

Method

  1. Boil rice.
  2. Heat oil in frying pan. Add onion and capsicum, cook on low for five minutes.
  3. Add prawns, heat for 1 minute. Add sweet chilli sauce, heat through.
  4. Mix coconut cream and cream to taste in a jug. Stir cream through prawns. Heat through, serve over rice.
