Light steamed pudding


A really delicious steamed pudding which my Nana and her mother before her have used for every Christmas and New Year! You can double the ingredients for a bigger pudding.

Ingredients

  • 1 breakfast cup flour
  • ½ teacup sugar
  • ½ cup mixed fruit
  • ½ teaspoon baking soda
  • ½ teaspoon nutmeg (ground)
  • ½ teaspoon all spice (ground)
  • 3 tablespoons butter
  • ½ cup warm milk (with the baking soda dissolved in it)
  • ½ teaspoon baking powder
  • 1 tablespoon plum jam

Method

  1. Cream the butter and sugar together.
  2. Add the flour, jam, fruit, baking powder and baking soda dissolved in milk. Mix well.
  3. Place pudding in stainless steel bowl. Boil it for 2-2½ hours. Keep topping the pot up with water and do not let water go over on to the pudding.
  4. When ready, leave pudding in pot for about 15 minutes to cool down. Turn over onto plate when ready.
