White chocolate and macadamia cookies


Irresistible straight out of the oven, these are the best cookies I've ever made and easy too!

Ingredients

  • 125g unsalted butter, softened
  • 1¼ cups brown sugar, tightly packed
  • 1-2 teaspoons vanilla essence
  • 1 egg, lightly beaten
  • 1½ cups plain flour
  • ½ teaspoon baking powder
  • A pinch of salt
  • 1 cup white chocolate bits
  • 1 cup unsalted macadamias, roughly chopped

Method

  1. Preheat oven to 180°C.
  2. Place butter and sugar in a bowl and beat until light and creamy.
  3. Add vanilla and egg and stir to combine.
  4. Stir in the sifted flour, baking powder and salt until just combined.
  5. Fold through white chocolate bits and macadamias.
  6. Place spoonfuls of cookie mixture on a greased and lined tray, allowing room for spreading. Cook for 15-20 minutes or until they are pale gold.
  7. Allow to cool on tray for five minutes before placing on a wire rack to cool further.
