Lemon torte


This recipe looks like a cheese cake but has no cheese. Delicious!

Ingredients

  • 1 packet plain biscuits (e.g. nice)
  • 125g butter, melted
  • 1 level teaspoon nutmeg
  • ½ teaspoon cinnamon
  • Pinch salt
  • Filling
  • 1 tin condensed milk
  • 1 and ½ teaspoon lemon rind
  • 1 teaspoon orange rind
  • ¾ cup lemon juice
  • 300ml fresh cream

Method

To make base.

Crush biscuits. Add butter, nutmeg, cinnamon and salt.
  1. Pack mixture into greased springform pan.
  2. Bake in moderate oven for 10 minutes. Cool.

To make filling.

Combine condensed milk, lemon and orange rinds and lemon juice. Let stand for 15 minutes.
  1. Beat cream and fold into mixture.
  2. Top base with filling, sprinkle nutmeg on top and refrigerate, covered, for 12 hours or overnight.
  3. Serve with ice cream on a bed of lemon custard or, as I prefer, a rasberry coulis.
