Method

  1. Preheat oven to 200 degrees Celsius. Heat oil in a saucepan over medium heat. Fry onion, carrot and celery until soft, add mince and cook for 2 minutes or until it changes colour. Stir in tomato paste, tinned tomatoes, peas and season with salt and pepper. Cover and let simmer for 15 minutes. Boil potatoes until soft, then drain and mash with butter and milk. Divide the meat mixture between 2 bowls, top with mashed potato and sprinkle with Parmesan cheese. Bake for 15 to 20 minutes or until tops turn golden. Serves 2.
