Fruit platter with dip


Ingredients

  • Dip:
  • 300 ml tub of light sour cream
  • 3 tablespoons of dessicated coconut
  • 1 tablespoon of apricot conserve
  • 100g very finely chopped glace ginger
  • For the platter:
  • Assortment of your choice of diced fresh seasonal fruit

Method

  1. Combine sour cream, conserve, coconut, and ginger in a bowl and mix well.
  2. Cover with glad wrap and put in fridge over night.
  3. Just before you're ready to serve, cut up an assortment of fruit of your choice - all fruit is great with this dip.
  4. Put dip into a serving bowl and place in the middle of a platter. Then arrange fruit around bowl. Serve with cocktail forks.
