Cajun chicken strips with mango salsa

Try Sharon's entree from week 2 of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

Cajun Chicken

  • 3 - 4 chicken breast, skin on
  • 2 tbls olive oil
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sage
  • 1 tsp thyme
  • 1 tsp pepper
  • ½ tsp cajun seasoning or to taste

Mango Salsa

  • 2 - 3 ripe mangos, peeled, pitted and cubed
  • 1 red onion, finely chopped
  • 1 Lebanese cucumber, peeled and diced
  • 4 tbsp fresh chopped coriander
  • 4 tbsp fresh lime juice
  • salt and pepper to season

Method

Cajun Chicken

  1. Cut chicken into strips, score the skin side slightly.
  2. Combine all remaining ingredients in a shallow dish and coat chicken well and leave in fridge for an hour to marinade.
  3. Heat a fry pan with a little oil over a medium heat and cook for approx 4 mins each side starting with skin side down first.

Mango Salsa

  1. Gently combine all ingredients in a bowl and season with salt and pepper to taste.
