Smoked salmon on cos boats

Try Sharon's smoked salmon starter from week 2 of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

  • Cos Lettuce
  • 1 lebanese cucumber, cut into thin matchsticks
  • 100g Smoked Salmon
  • 1 tub of Cream Cheese
  • Bunch of coriander leaves
  • Salt and pepper
  • 1 lemon, cut into wedges

Method

  1. Separate lettuce leaves and wash.
  2. Place small bundle of cucumber on each lettuce leaf.
  3. Add half a slice of smoked salmon on top, followed by a teaspoon of cream cheese.
  4. Place a coriander leaf on cream cheese and season with salt and pepper.
  5. Serve with lemon wedges in case anyone wants to squeeze over.
