Atlantic salmon with creamed potatoes and green beans

Try Joan's atlantic salmon from the third episode of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

Atlantic Salmon

  • 5 pieces of Atlantic Salmon, approx 100g each

Creamed Potatoes

  • 5 large potatoes
  • 500ml thickened cream

Green Beans

  • 2 handfuls green beans

Method

  1. Pan fry salmon about 5 minutes of each side.
  2. Thinly slice potatoes and salt and pepper each layer. Pour a little cream into baking dish, add a layer of potato. Continue in this fashion until all potato is used ending with cream on top.
  3. Bake in hot oven for 40 minutes until brown and crunchy on top.
  4. Place beans in salted boiling water for only a few minutes to blanch.
