Cauliflower with Basmati Rice

Ingredients

  • for the base

  • 1 medium size cauliflower cut into small pieces with part of the stem

  • 1 big onion cut into big slices

  • for rice

  • 2 and 1/2 cup boiling water

  • 2 cups basmati rice

  • for cooking rice:

  • 1 tablespoon garlic powder

  • 1 teaspoon paprika

  • 3 vegetable stock cubes

  • juice of 2 big peeled tomatoes

  • 2 and half cups water

  • 1 tablespoon olive oil

  • for the minced meat:

  • 1/4 kilo minced meat

  • 2 big onions chopped

  • 1 tablespoon salt

  • 1 teaspoon pepper

  • 1 tablespoon garlic powder

Method

  • 1.

    For the rice

  • 2.

    In a bowl put the rice and add boiling water and leave it for 15minutes

  • 3.

    After 15 minutes drain rice and set aside

  • 4.

    In a pot add the 2 and half cups water

  • 5.

    Add vegetable stock

  • 6.

    Add spices

  • 7.

    Add tomato juice

  • 8.

    Add the olive oil

  • 9.

    Cook on medium temperature until water boils and set aside

  • 10.

    For the meat:

  • 11.

    In a pot put the chopped onion

  • 12.

    Add the minced meat and the spices

  • 13.

    Cook for 15 minutes on medium temperature and set aside

  • 14.

    Fry the cauliflower for 7 minutes until it softens a bit

  • 15.

    Now how to put all together

  • 16.

    In a pot arrange the ingredients as following:

  • 17.

    Onion slices

  • 18.

    Cauliflower

  • 19.

    Minced meat

  • 20.

    Rice

  • 21.

    Add the water with vegetable stock and tomato o top very slowly

  • 22.

    Cook on high temperature for 1 minute until water boils then cover pot

  • 23.

    Cook for 20 minutes on low temperature

  • 24.

    When serving turn upside down on serving plate
