Prawn and smoked salmon with cherry tomato, cucumber and a tangy mayo

Try Helen's prawn and smoked slamon entree from the first episode of Come Dine With Me Australia Series 2.

Ingredients

Tangy Mayo

Method

  1. Peel and cut cucumber into strips. Put on a plate and cover with salt, set aside.
  2. Cut cherry tomatoes in half and dice avocado and place in a bowl. Squeeze lemon juice overt the top.
  3. With paper towel remove excess water and salt from cucumber strips.
  4. Peel prawns, leaving the tail on.

Tangy Mayo

  1. In a bowl, combine all of the ingredients and mix well.

To Serve

  1. On a plate, place a small amount of tomato and avocado mix.
  2. Top with a teaspoon of tangy mayonnaise
  3. Please cucumber slices on top
  4. 40 Add a teaspoon of sour cream
  5. 50 Add fresh salmon & prawns and drizzle with olive oil and lemon
