Mangoes And Bananas In Lime Syrup

Delicious served with greek yoghurt, whipped cream, crème fraiche, vanilla ice cream or the coconut and lime ice. And amazing for breakfast too ( if there is any left over!!)


  • 110 g sugar

  • 125 ml water

  • 1 ripe mango

  • 2 bananas

  • grated zest and juice of 2 lime


  • 1.

    Put the sugar and water into a saucepan and stir over a medium heat to dissolve the sugar.

  • 2.

    Bring up to the boil and simmer for 2 mins then let it cool.

  • 3.

    Peel the mango and slice quite thinly down to the stone, slice the banana too and put the fruit into a bowl with the cool syrup.

  • 4.

    Add the zest and juice of the lime, chill and serve.


Nectarines and peaches are really good in this too, instead of the mango or the bananas
