As easy as ABC   -  Lemon Butter Cake

This is the ultimate lemon cake for anyone who really loves lemon. It is cool, refreshing, yet moist and rich.

Serves 8 to 10

Ingredients

  • 20 cm baking pan - grease and line bottom of pan with greaseproof paper
  • 200 gms lemons
  • 175 gms butter at room temperature
  • 2 tablespoons extra virgin olive oil
  • 3 egss
  • 2 cups self raising flour
  • ¾ cup sugar
  • 1 tablespoon orange zest
  • 2 tablespoons greek yoghurt
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla paste

Method

  1. Pre-heat oven 180C
  2. Cut lemons (skin and all) and process in food process till fine
  3. Add sugar and process for 1 minute
  4. Add butter, eggs, yoghurt, olive oil and vanilla paste and process for 2 minutes
  5. Lastly, add flour, orange zest and baking powder and pulse till just combined.
  6. Please do not overmix.
  7. Transfer to baking pan and bake for 45 minutes.
  8. Stand cake in pan for 5 minutes before turning out on a wire rack to cool.

Notes & Tips

You can use oranges or raspberries instead of lemons.
