Onion Bhajis With Tomato And Chilli Sauce


Serves 4

Ingredients

Onion Bhajis

  • 110 g plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon chilli powder
  • 2 eggs beaten
  • 150 ml water
  • 4 onions thinly sliced
  • 2 tablespoons chives chopped
  • oil for deep frying

Tomato and Chilli Sauce

  • 25 g green chilli's deseeded and chopped
  • 200 g chopped tomatoes tin
  • 1 garlic clove crushed
  • 1 dessert spoon caster sugar
  • 1 dessert spoon brown sugar
  • 1 tablespoon white wine vinegar
  • 2 strips wasabi
  • salt & pepper

Method

Onion Bhajis

  1. Sieve the flour, baking powder and chilli powder into a bowl.
  2. Make a well in the centre, add the eggs and whisk those and the water into the flour to make a smooth batter.
  3. Mix in the onions and chives.
  4. Season with salt and pepper.
  5. Just before serving, heat the oil to about 170c/325f.
  6. Pop in dessertspoons of the onions and batter and fry for about 5 mins on each side, until golden, then drain on kitchen paper.
  7. Serve with tomato and chilli sauce.

Tomato and Chilli Sauce

  1. Put all the ingredients into a small saucepan and simmer with the lid off for 10 mins, until reduced by half. Keeps for a week or two
