Coriander, lime and chilli steamed fish

This zesty steamed fish is perfect for busy people who can't get enough of seafood.

Serves 4

Ingredients

  • 4 fish fillets
  • 1 lime, zested and juiced
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • 1 long red chilli, deseeded and finely diced
  • 2 tablespoons coriander,
  • finely chopped
  • 2 tablespoons mint, finely
  • chopped
  • extra coriander leaves

Method

  1. Place fish in a shallow dish. Combine lime juice, rind, fish sauce, brown sugar and chilli. Pour over the fish, cover and marinate for 10 minutes.
  2. Place the fish on a plate, top with coriander and mint. Put in a bamboo steamer over simmering water. Steam for 4 to 5 minutes or until cooked.
  3. Serve garnished with extra coriander leaves.
