Stick the spices and sugar in blender and blitz till all ground up
Place into a bowl and add oil - mix together and rub all over beef
Place beef on foiled tray and bake uncovered for 4 to 5 hrs at 150deg
The cooking time can differ with the size and age of the beef. It’s ready when the meat comes off the bone easily.
To prepare the sauce:
Saute shallots and garlic for a few minutes
Add bourbon and reduce liquid to about half - flambe if you are feeling like a bog.
Add rest of ingredients and simmer
Taste for balance and seasoning
Serve with ribs
