Melting Moments with a passionfruit filling.
1.Preheat oven to 160 C. Line 2 trays with baking paper.
2.Cream butter sugar and vanilla until light and fluffy.
3.Add sifted flours and mix until a soft dough forms.
4.Roll heaped teaspoonfuls of mixture into small balls. Place on trays. Using a fork dipped in flour, lightly flatten each biscuit until 1cm thick.
5.Bake at 160 C for approx 15 minutes, cool on trays for 10 minutes, then transfer to wire rack.
6.To make the filling beat butter until light and fluffy. Stir in passionfruit pulp and icing sugar. Spread on flat side of biscuit and top with another biscuit.
7.Dust with icing sugar to serve.
You can also change the recipe into chocolate melting moments but substituting 1/4 cup of plain flour with Cocoa Powder and for the filling add a tablespoon of Cocoa and some water for the passionfruit.
