Enzo's Apple & Cinnamon Muffins

Healthy muffins using wholemeal flour... Yummo!!!

Serves 12

Ingredients

  • 2 cups Wholemeal Flour
  • 2 Granny Smith Apples, diced into small cubes
  • 3/4 cup Unsalted Butter, melted
  • 3/4 cup Light Milk
  • 1 Egg
  • 1/2 cup CasternSugar
  • 1 tsp Baking Powder
  • 1/2 tsp Vanilla extract
  • Cinnamon Stick

Method

  1. Preheat Oven to 180 degrees celsius
  2. Sift the flour, baking powder and sugar into a large bowl
  3. Using a microplane grate cinnamon into flour mix about 1/2 teaspoon
  4. Whisk the butter, milk, egg and vanilla all together and add to the dry ingredients.
  5. Mixing lighty with a fork until just combined then add chopped apples and mix through.
  6. Spoon large spoonfulls into a lined muffin tray and bake for about 15 minutes or until a skerwer comes out clean.
