Carrot and Date Cake

This is kind of a cross between a carrot cake and sticky date pudding. It's a really rich cake but so good you just want to keep eating it til you're sick (...which is what I tend to do)


  • 1 cup wholemeal self raising flour

  • 1 tsp baking powder

  • 1 tsp bicarb

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp ginger

  • 1/2 tsp salt

  • 3/4 cup raw sugar

  • 2 eggs

  • 1/2 cup oil

  • 3 medium grated carrots

  • zest of 1 orange

  • 1/2 cup sultanas

  • 1/2 cup dates - coarsly chopped

  • 1/2 cup almonds - coarsly chopped

  • icing:

  • 250g cream cheese - cold

  • 50g butter - softened

  • 1 tsp vanilla

  • 275g icing sugar

  • zest of 1 orange


  • 1.

    Turn oven to 175 C

  • 2.

    Put all ingredients in a bowl and mix well.

  • 3.

    Pour into a loaf tin lined with baking paper or a 12 hole muffin tin sprayed with cooking spray.

  • 4.

    Bake for 40 mins or 20 - 25 mins for muffin size.

  • 5.

    ICING: Beat butter til white and creamy.

  • 6.

    Add cream cheese and beat til smooth.

  • 7.

    Add vanilla and orange zest and beat in.

  • 8.

    Gradually beat in icing sugar til combined.

  • 9.

    Spread ontop of cake/ cakes


The individual ones are great warmed in the microwave as a pudding with ice cream.

This muffin is quite good. Plenty of texture and complimenting flavours (carrot, orange and dates work very well together). I added some (1/4 tsp) ground coves and used peanut oil - This added to some depth to an already delightful muffing.

This recipe sounds great with the addition of dates! I can imagine how moist it would be. Will have to try it out one day! Thanks Jackie :)

Yum, yum!! This is my style of baking - just mix and mix and I also love dates in cakes. I am gonna bake it. Thanks.
