This is kind of a cross between a carrot cake and sticky date pudding. It's a really rich cake but so good you just want to keep eating it til you're sick (...which is what I tend to do)
Turn oven to 175 C
Put all ingredients in a bowl and mix well.
Pour into a loaf tin lined with baking paper or a 12 hole muffin tin sprayed with cooking spray.
Bake for 40 mins or 20 - 25 mins for muffin size.
ICING: Beat butter til white and creamy.
Add cream cheese and beat til smooth.
Add vanilla and orange zest and beat in.
Gradually beat in icing sugar til combined.
Spread ontop of cake/ cakes
The individual ones are great warmed in the microwave as a pudding with ice cream.
