Baked Olives

Jazz up the humble olive with a stint in the oven and a spicy coating.

Ingredients

  • 4 cups Kalamata olives (cured – washed and drained)

  • 20ml extra virgin olive oil

  • Half a cup of spice mix

Method

  • 1.

    Place a flat tray in the oven, until heated through.

  • 2.

    Pop your olive oil into the hot tray and coat the surface.

  • 3.

    Place your olives into the tray. Shake the tray so they are evenly spaced and place back into a 200 degree Celsius oven for 45 minutes.

  • 4.

    Once baked, remove from the oven and stir through your chosen spice mix. Matthew Hayden used one with dried Sicilian herbs, lemon, rosemary, garlic, and chilli flakes in episode 4 of his show.

  • 5.

    Allow to cool and serve.
