Avocado and Mango Salad

This fresh, tasty salad from Matthew Hayden's Aunty Cay is quick and easy and can be prepared ahead of time.

Ingredients

  • Salad:

  • 3 rashers bacon

  • 2 mignonette lettuces

  • 2 mangoes, peeled and cubed

  • 2 avocados, peeled and cubed

  • .5 cup (65g) unsalted roasted cashews, roughly chopped

  • Dressing:

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon lemon juice

  • 1 tablespoon lime juice

  • 1 teaspoon French mustard

  • 1 teaspoon thickened cream

Method

  • 1.

    Trim the bacon and cut into thin strips. Fry in a non-stick pan until brown and crisp, then drain on paper towels and leave to cool.

  • 2.

    Pull the lettuce apart and wash and dry the leaves. Arrange the lettuce, mangoes and avocado in a serving dish. Sprinkle the cashews and bacon over the top.

  • 3.

    Put all the dressing ingredients into a small screw-top jar, and shake well to combine

  • 4.

    Drizzle the dressing over the salad and serve immediately.

Notes

Serves 10 as a side salad

I make this for our Christmas buffet every year. I usually use walnuts instead of cashews. It is delicious and nothing is left on the platter. A winner.
