Bacon and Zucchini Omelette

Eggs are a great source of nutrients and this super simple breakfast dish from episode one of Matthew Hayden’s Home Ground is a nice way to jazz them up.


  • 2 eggs

  • 1 medium sized zucchini (chopped)

  • 4 rashers bacon (chopped)


  • 1.

    In a medium sized bowl crack two eggs and beat vigorously.

  • 2.

    Heat small pan and sauté chopped bacon and zucchini.

  • 3.

    Once cooked, pour egg mixture over the top of the bacon and zucchini mix.

  • 4.

    When the omelette becomes solid, fold in half and serve!
