Ingredients

  • 1 litre good quality chicken stock
  • 3 eggs
  • 3 Tablespoons parsley finely chopped
  • 3 Tablespoons grated parmesan
  • Salt and pepper

Method

  1. Heat the stock to boiling point.
  2. Whisk eggs, parsley, parmesan, salt and pepper together in a bowl.
  3. Add egg mixture to stock, whisking constantly until egg has cooked.
  4. The cooked egg ribbons will float to the top.
  5. Serve immediately.
