Mahogany Chicken

This yummy sticky chicken dish is a conversation starter or ice-breaker! Chances are your family and guests will try to guess at the ingredients!

Serves 4 to 6

Ingredients

  • 1 kg chicken wings - cut into 2 pieces and discard the tips
  • ¼ teaspoon black pepper
  • ½ teaspoon pink salt
  • sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons of good quality dark chocolate - grate or chop
  • ¼ cup maple syrup
  • 1 tablespoons fish sauce
  • 1 teaspoon olive oil
  • ¼ teaspoon chiinese five spice powder
  • ½ cup chicken stock

Method

  1. Wash, clean and dry chicken pieces.
  2. Marinate with pink salt and pepper for 10 minutes.
  3. Arrange chicken pieces on trivet over a baking pan.
  4. Bake for 20 minutes at 180C.
  5. While the chicken is baking take the following steps:
  6. Heat the maple syrup in a pan until it is bubbly and slightly thickened.
  7. This should not take more than two minutes.
  8. Remove the maple syrup from heat and stir in the dark chocolate.
  9. Add oyster sauce, fish sauce, olive oil, five spice powder and chicken stock.
  10. Over low heat, roll pan to mix all the sauce ingredients.
  11. Cook till sauce coats the back of spoon.
  12. Add chicken pieces and coat well
  13. Taste and correct seasoning if necessary.
  14. Remove from heat
  15. Serve chicken as it is or on a bed of rice/pasta/noodles.

Notes & Tips

You can BBQ the chicken pieces. Use wing tips to make chicken stock.
