Beetroot Horseradish


Ingredients

  • 4 medium beetroots, cooked and peeled
  • Squeeze of lemon juice
  • 1 teaspoon dijon mustard
  • Pinch of sugar
  • 4 tablespoons horseradish cream
  • salt & pepper

Method

  1. Boil the beets until cooked, when the skin is easy to remove. You know when they’re ready when you are able to easily remove the skin with your fingers.
  2. Roughly chop beetroot.
  3. Put all ingredients into food processor and blend until smooth. Check seasoning and refrigerate.

This keeps for weeks in the fridge and is delicious with cooked meats and in sandwiches.
