Coconut Rice


Serves 4

Ingredients

  • 2 cups jasmine rice
  • 400ml tin coconut milk
  • Water to cover
  • 1 stick of lemongrass, bruised and tied in knot
  • 2 fresh kaffir lime leaves
  • ½ cup shredded coconut- toasted (optional)

Method

  1. Wash the rice really well to remove all starch and drain .
  2. Put the rice in a rice cooker with coconut milk, lemongrass and lime leaves
  3. Pour enough water over on top - just enough to bring the liquid level just past your first knuckle.
  4. Once cooked, fold through toasted coconut and serve.
