Peasant Pasta


Serves 2

Ingredients

Croutons

  • 2 slices of stale italian bread
  • Olive oil
  • 1 tbsp melted butter
  • 1 teaspoon garlic minced
  • 1 tablespoon parmesan
  • salt & pepper

Pasta

  • ¾ packet of thin spaghetti (like angel hair)
  • ½ cup olive oil
  • 1 tablespoon spoon garlic minced
  • 1 teaspoon chilli, finely chopped
  • ½ cup basil, finely chopped
  • ½ cup parsley, finely chopped
  • 1 tablespoon oregano, chopped
  • 1 tablespoon thyme, chopped
  • Squeeze of lemon juice and rind
  • Extra parmesan
  • salt and pepper

Method

  1. Cut the bread into croutons and toss together with the oil, butter, garlic, parmesan, salt and pepper and bake in the oven on a tray until golden.
  2. Cook the spaghetti according to packet instructions.
  3. In a wok, heat the oil, garlic and chilli. Then add in the herbs and lemon rind, giving it a quick toss.
  4. Add the cooked pasta into the wok and stir through. Season with salt and pepper and crumble the freshly baked croutons into the pasta. Add in more grated parmesan and toss through. Add in a little lemon juice.
  5. Serve hot.
