Cut the puff pastry in half lengthways so you can make 2 long rolls
Remove the sausage skin and place the sausage meat on each piece of pastry (2 sausages per roll.)
Top with finely chopped tomatoes and basil.
Roll up the pastry. Seam on bottom and glaze the top with egg yolk.
Cut the rolls into desired size and place on baking tray, lined with baking paper.
Bake in a preheated 180 degree C oven for about 20 minutes until golden brown and the meat is cooked through.
