Melt chocolate & butter in microwave stir till smooth. Allow to cool a little.
Add spices, egg yolks, alcohol to the chocolate and mix together.
Beat the egg whites with a mixer. As the egg whites start to stiffen, add the sugar and beat to soft peaks.
Whisk the cream till just firm.
Mix the egg whites and cream together. Fold in half the egg white/cream to the chocolate mixture and mix till well combined. Then fold in the second half.
Spoon into rectangular dish lined with glad wrap. Tap the dish on the table to get rid of any air bubbles then cover and freeze for 3 hours.
Slice, serve and eat!
